Bodega Cerron are a brilliant producer that I first came across in late 2023.  Adopting organic farming and biodynamic principles, they're making natural wines with more than a nod to the old traditional winemaking ways, and the results are spectacular.  I'm not normally a huge fan of Monastrell - generally too punchy for my palate - but this is Monastrell with a difference and probably my biggest (positive) wine surprise recently.  La Servil is 96% Monastrell with the other 4% made up of indigenous varieties that, I'll be honest, I've never come across.  Deep ruby in colour with a lovely nose, lots of complexity and notes of wild strawberries, dark berries, vanilla, meat, leather, mushroom, balsamic, flowers and herbs.  Yes, loads going on!  This is followed by a lovely silky mouthfeel with fresh fruits - red berries and cherry - then minerals, forest floor, chocolate, spice, liquorice, leather and herbs.  Medium acidity and tannin with a long savoury finish, it's different and very good indeed!  I couldn't get enough and, given the potential to develop in bottle over the next 5-10 years, it's superb value for the juice.  Try it and you won't be disappointed.
