Given that we're constantly asked what our favourite wines are, we've started putting together our Ultimate Wine List - which is basically a list of the best wines from every region across the world. We're keeping the list to one wine from each producer and sometimes it may not even be the producer's top wine that makes the list but we'll explain our reasons for each wine as we go along. And, please note, it's not only wines that we stock - it's an ever evolving list of wines that deserve their place.

No. 22 - Montes Purple Angel (Colchagua, Chile) - one of Chile's finest wines, this shows well vintage after vintage. It's a rich, predominantly Carmenere based wine but it is so perfectly balanced that everything is in harmony. There's bright bramble fruit, blueberries and plums, nutmeg, vanilla, dark chocolate and subtle toasty oak, but these ripe flavours are balanced with tobacco, leather and minerals. It truly is very complex with plush tannins, good acidity and great length. A stunner. Available here.
No. 21 - By Farr Sangreal Pinot Noir (Victoria, Australia) - this is our favourite wine from a world class line up and it's everything I love about Pinot Noir. Wonderfully aromatic with notes of cherry, wild strawberry, raspberry and cranberry, as it evolves in the glass it reveals hints of Asian spice, mushroom, forest floor, pepper, minerals and toasty oak. It's so silky that it makes you saw "wow" out loud and the only downside is that we always finish the bottle too soon. Available here.
No. 20 - Vassaltis Assyrtiko (Santorini, Greece) - this is from a relatively new, small producer with the focus on showing that Greece can make world class wines. Dry and minerally with ripe stone fruits, citrus and a hint of honey, it has fresh acidity and a long finish with a saline twang. It gets better and better with time in the glass - always a good sign - and it's a really impressive wine. A great addition to any list.
No. 19 - Roquette e Cazes Xisto (Douro, Portugal) - this is the top wine of a joint venture between two great winemaking families - the Roquettes (Quinta do Crasto) and the Cazes (Chateau Lynch Bages). The best of Douro and Bordeaux and it's a superb wine. Full of supple bramble, plum and cherry fruit with tobacco, all spice, savoury notes and violets, it is beautifully made with velvety tannins and bright acidity. Rich but elegant, it drinks well from release and ages wonderfully.
No. 18 - La Ferme de la Sansonniere Les Fouchardes (Loire, France) - absolutely sublime Chenin Blanc from Mark Angeli, this has become a cult wine in a short space of time and we can see why. The purity of fruit is wonderful - lemon, mango and apricot - with vibrant acidity, a mineral edge, creaminess and a subtle honeyed finish. Textured, complex, balanced and harmonious, it's got the lot. Available here.
