The last few bottles of the first release of this excellent fizz from Danbury Ridge. Solstice is a multi vintage blend of the classic Champagne varieties - Pinot Noir, Chardonnay and Pinot Meunier. A proportion of each blend is held back in a foudre aged perpetual reserve (like a solera system) to ensure continuity and complexity. This first edition was based on the 2018 harvest with 25% from the reserve. It's richer than most English sparkling wines with beautiful notes of brioche, roasted nuts and pastry as well as baked apple, apricot and citrus. Really very fine and balanced with bright acidity and a mineral streak, plus a stunning length of flavour, it's an excellent first release and well worth following. Just 3000 bottles produced.
