Francoise is one of Champagne's leading lights on biodynamics and one of the first growers to be certified (in 1999). Pinot Meunier is champion amongst her 8 hectares of vines and the estate is now managed by Francoise and her son, Vincent. The wines they produce are stunning and highly sought after by those in the know. The Entre Ciel et Terre undergoes extensive lees ageing (6 years) and the result is a rich but beautifully balanced fizz with notes of ripe apple, peach, spice, honey and toast, as well as a hint of oxidation which adds to the complexity. Zippy acidity and minerality play their part too and there's an underlying energy that means this will develop in bottle for years (although it's delicious now). Seriously good Champagne!
