Palomino / 13% / organic
Produced in Jerez - usually sherry country - this is a brilliant white, made from low yielding Palomino Fino grapes, that age in 80 year old sherry casks under flor for 12 months before bottling. This makes the wine unlike most things you've tasted before - but it is truly excellent. Deep in colour, the nose reveals a salty tang with baked apple, apricot, lemon curd and toast. On the palate, it has lots going on - sweet fruit (apple, apricot, citrus) on the attack but a bone dry finish, racy acidity (they pick some of the grapes very early to achieve this), a mineral edge, salinity, lovely weight, and a slightly nutty oxidative note. Taste again and you'll find hints of honey, vanilla and sweet spice. It's complex, long and balanced, really different and, I would guess, loved by sommeliers as a real food wine. We drank with curried monkfish and it was spectacular. Try for yourself.
